Leftovers are what's for dinner tonight.

It's been turkey mania this week, from turkey dinners to hot turkey sandwiches, and cold turkey sandwiches for lunch every day while the carcass is chillin' in the freezer until I have time to make turkey soup. Tonight, we decided to finish everything off, or at least get it used up and out of the fridge without wasting any of it. Wasting food is one my biggest pet peeves. Ask my daughter. Half of her BLT from breakfast this morning is sitting in the fridge with her name on it. So, with my husband back in the kitchen again (GLEE!) we made two big dishes of turkey pot pie.

We ad-libbed. Okay, my husband was the creative one. We had a lot of mashed potatoes left, so he lined the casserole dishes with a good layer of garlic mashed taters.




Then he made a stew of turkey, carrots and corn, celery, flour and milk. He added that on top of the potatoes. The recipe he found online actually called for half and half but we used milk, one because we didn't have any half and half and two because milk is a lot easier on the waist line.



I just happened to have some puff pastry in the freezer. I buy it because I know it will make something yummy but I never seem to make anything yummy with it. Well, today was my lucky day! I rolled out each half and spread a layer on top of each dish.



The instructions said to bake in the oven for 20 minutes. Well, after twenty minutes the puff pastry didn't look any different then it does in the photo above and I began to think you wouldn't be reading a post about our turkey creation. Then we realized, perhaps, that thick layer of mashed potatoes, cold, straight from the fridge mashed potatoes might slow down the cooking time. Maybe. Just a little. We gave them about 45 minutes or so and they turned into this...




We let them cool off, cut into one for dinner and decided to save the other one for later this week. We were going to store one in the freezer to keep that carcass I mentioned company but we have a couple of rushed nights this week now that swimming lessons will be starting up. Besides, the glimmer twins were totally enthralled with this newest dish. I'm not sure if they can wait until Wednesday to have some more. What do you think?



This twin always leaves a place mat not looking quite like the others, but he's a good helper, when he wants to be.


While this twin is a bit of a diva, can you tell? She's always a good helper, so we humour her.

Oh, that looks so yummy!! I can see why the kiddos are digging right in. I would too!! They are SOooo cute, BTW. Thanks for sharing your delicious recipe. I hate wasting food too! Big time! -Tammy

Great recipe idea...our turkey didn't go as far as I'd thought, did get hot turkey sandwiches and soup though! Great photos!

We never seem to have much turkey left over from our Thanksgiving! Sounds like a good recipe; I will have to cook up some chicken to give it a try.

Turkey and puff pastry together. Now, that's a dinner.
Seriously, I don't understand why so many people only eat turkey on the holidays. I convinced Mountain Man to cook one this summer and it was wonderful.
Loved the photos so now I'm off to eat breakfast.

J and I do a mean chicken dish with it!! My family gathers every year at New Years in North Carolina at my aunt and uncles. We made our "dish" for dinner one night. It wouldn't "puff"...at all!!
We baked that thing for 2 hours;( it usually took 25 minutes!) and then we realized the altitude change. We live at 3,000 ft; their altitude was 6,000 ft.! Oy!

Boy was dinner late that night!

I would LOVE to visit PEI. It would pretty much be a dream come true for me someday. I think my husband will have to get on the planning for that! lol
